To mature the Colibri expression (“hummingbird” in Portuguese), we moved the cachaça back and forth over the years between repurposed oak barrels and amburana (Brazilian teak) barrels. The predominant spices of vanilla and toffee (from the oak) and cinnamon and chestnuts (from the teak) come together in a balanced expression that also includes tropical fruit such as banana and passionfruit but finishes playfully with notes of snickerdoodle.

Colibri Cachaça Cocktails

Colibri Milk Punch

  • 1.5 oz Novo Fogo Colibri
  • 0.75 oz Giffard Vanilla Liqueur
  • 1.5 oz cream

Shake ingredients with ice and pour into a rocks glass over fresh ice. Garnish with grated nutmeg.

Winter Tonic

  • 1.5 oz Novo Fogo Colibri
  • 0.5 Calvados
  • 3 oz tonic water

Build in a highball glass with cubed ice. Garnish with lemon peel.

About Amburana Trees

Our Colibri expression is aged in American oak and Brazilian teak (amburana) barrels. The amburana tree that is used for aging cachaça (Amburana cearensis) is native to northeastern Brazil. Amburana is a fragrant wood that was used for centuries as a traditional medicine to treat a range of illnesses, from arthritis to respiratory maladies, and is still used today in the perfume industry. Unfortunately, today it is threatened due to deforestation; although amburana is growing in popularity for aging cachaça, it is critical for its future that it be acquired from legal sources. We at Novo Fogo own only two barrels of amburana. Before you buy cachaça aged in Brazilian woods, please ask: was this wood sourced legally?
